When I was a little girl my grandma would make the best Johnny cake in the world, and my mom would make a pretty darn good cornbread too. Is there a difference? If I were to say yes, it would only be based on the fact that grandma used more sugar in her recipe than my mom did.
This recipe tastes exactly how I remember my grandma’s tasted. I’d say it’s perfect and needs no adjustments. It’s possible that it is actually her recipe because I found it in my recipe box (in my handwriting) with no reference as to where it came from.
1/2 c. sugar
1 c. sour milk
1/2 tsp. baking soda
1 1/2 tsp. baking powder
1/2 tsp. salt
3 tbsp. vegetable oil
1/2 c. cornmeal
1 c. all-purpose flour
Preheat the oven to 325 degrees, and grease an 8”x8” baking pan.
Mix all of the ingredients together in a good sized bowl. Pour the batter into the prepared pan and bake for about 20 – 25 minutes, or until a toothpick comes out clean when inserted into the center.
So, is there a difference? If so, do you know what it is? I’d love to hear your thoughts on this one.
